Each country owns a special food, such as pizza of Italia, grilled steak of New York, the USA, taco of Mexico and as we know Vietnam’s special dish is pho. Pho is a traditional dish of Vietnamese. Pho appears everywhere, from country roads to alleys in cities, from eateries to luxury restaurants and even street vendors. People eat noodles for breakfast or they can eat for lunch and for dinner, but it’s hard to get bored with the special taste of noodle.

Pho includes of flat rice noodles in a light and beef or chicken meet. The bowl of pho is usually added with basil, lime, chili, and other extras on the side so that eaters can season the soup to their own taste. The balanced tastes of sweet, salty, spicy, and citrus will bring the best flavor for the dish. Pho usually becomes an instant favorite for anyone coming to Vietnam.
In processing a bowl of pho, broth takes the most important role and decide the flavour of the dish. The traditional broth will be baked with the bone of cow along with some spices. Although the recipe of each pho eatery is usually kept the secret, customers can feel the flavour of spices, including of ginger, cardamom, aniseed, cloves, coriander seeds, cinnamon, dried onion. Beside broth, rice noodles is also an important factor deciding the quality of the dish. The rice noodles have to be soft and tough. Hot pho must be more delicious and Hanoians usually eat pho along with fried hollow Chinese bread sticks.
Pho is believed to have originated from Nam Dinh province but Hanoi has made pho become famous. However, pho is popular over the country and each region has a owned flavour. In the North of Vietnam, pho has a delicate flavour because of its clear and simple broth cooked with the bone of cow, anise, cloves and cinnamon harmonised into one subtle undertone flavour. Northern people prefer eating rare beef noodles which is processed with thinly sliced rare beef cooked quickly. Some kinds of condiment such as mint, chopped cilantro, green onions or thinly sliced white onion are added on top of bowls rather than served alongside.

In Southern Vietnam, pho is often served in bigger bowls with a plate of various kinds of vegetables, such as mint, cilantro, bean sprouts, lime, chilli, basil and the optional chilli or sriracha sauce. Customers can choose kinds of vegetables they want to add and mix them into the bowl of pho and enjoy.
